Dismayed by the absence of a cake plan for the semiquincentennial celebrations, Grace Pak set out to create one herself. In late-night crafting sessions, she has meticulously designed elements like Lady Liberty’s torch.

Back in January, Pak posed a question to the congressional commission tasked with planning America’s 250th birthday celebration: Was anyone making a cake? The answer left her astounded—no cake was being planned.

“How could we not have a cake for a birthday?” Pak wondered.

This marked the beginning of her journey to develop America’s semiquincentennial cake, a monumental piece of culinary art. The cake matches the dimensions of a Mini Cooper and features intricate decorations, including chocolate Black Hawk helicopters, an eagle, and Lady Liberty’s arm crafted from Rice Krispies Treats and fondant. If successful, her creation will be unveiled at a ceremony at the Library of Congress.

Originally from New York City, Pak is a renowned cake artist with experience displayed on the Food Network and weddings at the Plaza Hotel. Capturing a nation’s spirit through flour and frosting proved challenging, particularly due to unforeseen political implications.

“It’s the 250th, and I feel like so many people are not excited,” Pak expressed, referring to the political atmosphere affecting the celebration’s enthusiasm. She maintains that cake can bridge divides.“Bring cake and everyone’s in.”

Despite the challenges, Pak persists, dedicated to ensuring the cake stands as a symbol of unity during the significant event.
