Chef Dennis Littley, a culinary educator from New Jersey and founder of Ask Chef Dennis, highlights the key issue with freezing. The water inside foods crystallizes, altering their texture. He advises caution, stating, Being able to freeze something doesn’t necessarily mean you should.
Foods Best Stored Out of the Freezer
1. Cheese
Though most cheese varieties can technically be frozen, the results may be less than ideal. Littley notes that cheeses, especially softer options, can turn crumbly or grainy once thawed. Instead, he recommends purchasing only as much cheese as needed while it remains fresh, keeping it well-wrapped in the refrigerator.
2. Cooked Pasta
Freezing cooked pasta depends on its preparation. According to Littley, pasta may soften during freezing and thawing, with creamy sauces sometimes separating. Refrigerating leftovers and consuming them within a few days is preferable. Heartier baked pasta dishes, however, are more freezer-friendly.
3. Cured Meats
While prosciutto, salami, and similar cured meats can be frozen, it’s their post-freezing texture and flavor that raises concern, particularly when used in sandwiches or on charcuterie boards. Littley suggests keeping these meats refrigerated and consuming them within the recommended timeframe after opening.
4. Wine
Wine is a definite no-go for freezing. The liquid expands during freezing, impacting the bottle or cork and potentially compromising flavor and aroma. Littley advises resealing and storing opened wine in the refrigerator. The wine can be returned to serving temperature before consumption.
Though freezing food seems a straightforward method for preservation, proper storage is crucial for maintaining quality. Littley notes the variability among dishes, stating, Some dishes freeze beautifully, while others aren’t going to come back the way you want them to.
